A remarkable, moderately roasted, very floral Tea Kuan Yin. Pastry, flowers, and a little cinnamon - that's what you'll get from this flavor smile. Hand-roasted, we are quite proud of this find, our first certified organic oolong (others are available, but we haven't been very impressed until now). Tea Kuan Yin, which has various spellings, comes from the hills of Fujian Province, southeastern China. This is a tea which can be steeped multiple times, so enjoy!

Use just over 3 grams (heaping teaspoon) in an infuser for 8 oz. of 195° water and allow to stand for 10 minutes before drinking.
Fill the pot between 1/5 & 1/4 full of dry leaf, add 195° water and allow to stand for 60 seconds before decanting. The second brew should steep for 20 seconds, the third for 45, the fourth for 1 minute 20 seconds, and the fifth for 2 minutes 20 seconds. Please note that, as flavor particulates sink, decanting into a pouring pitcher and from there to cups seems to work best. Alternatively, cups can be partially filled, then topped off in reverse order, so flavor in each cup will be approximately the same.
Put into your infuser as many teaspoons of Tea Kuan Yin as cups you wish to pour. Allow to steep for 4 minutes in 195° water and remove infuser to drink. Can be steeped multiple times.
